Brew Log #043: Midday Moon
This one is intended to be a Cascadian Dark. Using a base recipe I picked up at work this week, but with a few modifications to make use of the hops I already have in my freezer.
Cascadian Darks are one of my favorite beer styles, and I really want to develop a good base recipe that I can use any time as a reliable dark ale, but also as a starting point for more flavor experiments.

Tasting Notes
2022-01-20: First morning, some slow activity already in the bubbler.
2022-01-26: Gravity check – 1.018. Still a little high, despite a lack of yeast activity. Might have a stuck fermentation. Flavor is really good, I think this is a great balance of malt & hops. I’m actually hesitant to complete the plan to dry-hop this, but whatever. I also realized that I don’t have a good secondary fermenter anymore since I got rid of my carboys. I’ll have to secondary in the keg, I think. Oh well.
2022-02-14: Gravity Check – 1.012 for over a week now, went ahead and racked the beer to the keg. I decided to skip the dry hop step, I find this perfectly drinkable as-is. Someday I’ll try something with dry hops, but for my first beer in over six months I didn’t want to risk it.
